Collecting Windows Event Log data from Non-Persistent VMs

Hi all,

Just wondering what people use to collect the Event Logs from VMs that revert on log off?

Do you use SCOM? Event Log Subscriptions? Something else?

We never really bothered before, but now we are pushing for some more monitoring.
